Yesterday morning I tried to make a smoothie, but it came out much more like a delicious ice cream!!!! Not sure how it would hold up in the freezer, i.e., if that would change the consistency in some unwanted way or thrilling way, but if you pour this right from the blender, it could pass in any kid's book as real, rich ice cream! What a nice treat for O's, for whom dairy ice cream is verboten! I stumbled upon this because I didn't have any bananas, a usual staple in my smoothies. (The reason I didn't have any bananas is a semi-interesting aside that has nothin' to do with nothin': I bought 'em green from the HFS and they never ripened, which happens all the time, so I finally said something and they said oh, yeah, don't buy 'em when they are like that...oooookay, then why are the green ones sometimes the only ones you have out? WHOLE FOODS, WHERE R U?). Since I was banana-free and since I really needed a protein boost, I decided to make this smoothie with THREE--count 'em, three--raw eggs, which would replace the thickening/creamifying role of the banana, and also give me protein, glorious protein (and some vitamin K, which I'm big on). Oh, btw, if you are worried about salmonella, I don't blame you and being a responsible poster I should say that there IS a possibility of contracting salmonella anytime you use raw eggs. However, I use only CERTIFIED ORGANIC raw eggs, which, imho, reduces the risk down to what, to ME, is an acceptable level, given the benefits to me of consuming eggs (and especially now that I cannot do hard-boiled eggs, since my one and only surviving stove burner went belly up--which is another story involving much sparking and 4th-of-July-like fanfare...I made some at my long-suffering ma's yesterday, though, so, not to worry). ANYWAY...here is the recipe for what really comes out in the texture and taste of a lovely raspberry ice cream!

RASPBERRY FAUX ICE CREAM (serves 2 to 4):

- Three raw CERTIFIED ORGANIC eggs
- About two cups of 100% pure pineapple juice, or maybe a hair less
- About 1 tablespoon of your favorite brand of blueberry all-fruit jam (I used Tree of Life)
- About half a bag of frozen (right outta the freezer) raspberries; I used Tree of Life, again, I think that is the brand (they get around, that Tree of Life *lol*). Not sure of the size of the bag, but I think the whole bag is something like 10 oz, so about 5 oz is what you would use.

Blend all on the highest setting, until completely blended. It (blender blade) might freeze up on you/get stuck on a clump-o-frozen raspberries), since this is a thick mixture. Never fear, simply stop the proceedings, take blender off blades, shake it around a tad, place back on blade but not in same position it was originally in (rotate it a tad so that the offending clump is situated in a different spot on the blade). Aaaaand, GO! Once blender is going smoothly for a while, it is fully blended.

Use immediately for the creamiest, richest faux ice cream imaginable!!!! I have also made faux ice creams in the past using nut butters, but this egg technique comes out very rich and creamy. Perfect for O's. For A's, you might try it using just the whites, but I have no clue if it would come out the same.

That sounds delicious. I'll have to try that. By the way, I had the same problem with some organic bananas that I bought at Whole Foods. All the organic ones were green and they didn't ripen up well at all. Last time I'll do that!
I finally got around to buying a blender so smoothies here I come.

Yeah, for some reason, organic bananas do NOT ripen once picked, so don't buy the green ones, is what I have finally learned. Apparently, in nature, bananas don't ripen once picked, so one must wonder what in the heck the big agro boys do to the mainstream ones to get them to ripen in the store/at home. I know they do something horrendous like sticking them in a room of sulphur gas or SOMETHING like that (I just made up the sulphur gas part, because I can't remember just what it was that I read, but it was similar sounding *lol*--facts? What care I!) to get them to ripen, and then they just keep on a'ripening...unnatural! Anyway, bottom line: Buy organic and make sure they are already yellow/ripe!!!! Because otherwise, you will have to wait longer than it takes for Gore to ever become prez for them to ripen. And, in fact, they won't ever ripen, so fuggedaboutit. As for Gore becoming prez, I live in hope, as I have been since 1988...

My son's girlfriend was at our Seder the other night. She's a floral designer and I was asking her about some flowers I bought that died right away and she said something about the fact that if I bought them in the grocery store (got them at Whole Foods) and they were near the vegetables and fruits that give off gases naturally, they affect the flowers! I was annoyed that some of the cut flowers that were expensive didn't seem to last. Now I know why and maybe I should buy them somewhere else.
