Baked Oatmeal
6 servings 3 pts each
2 cups oatmeal
1 1/2 tsp baking powder
1 c soy? milk (I am experimenting with using water will let you know how it turns out)
1 whole egg plus 1 white ( or 1/4 cup egg beaters)
1 c applesauce
1/4 c brown sugar
1/4 c raisins
1/4 t ground cloves
1 tsp vanilla
mix oatmeal and baking powder,  add remaining ingredients and mix well.  Pour into a sprayed pie pan or lined muffin tins.  bake for 45 minutes at 350 degrees, serve warm or cold (comes out of muffin liners better cold)  you can add extra nutmeg or cinnamon if this is too bland. ( I add nutmeg and ground clove and 1/2 c chopped walnuts,) I found it was best to do the recipe as is the first time then adjust to your own taste.

This sounds delicious. What does 3 pts each mean? Obviously not 3 pints, which is what it would mean in England *L*.

I assume the cooking tme in muffin liners is less?

Is it meant to be like a rice pudding/thick porridge texture or like a muffin?

If the former this would also work with brown rice flakes for those who can't do oats.

they can be baked like muffins, I put it in a pie plate and cut wedges, I think proably any hearty grain would work. I did goof on the recipe though because I was trying to adjust it to remove the milk, so either use 1/2 c applesauce and 1 c soy milk or 1 cup apple sauce and 1/4 c water.
the batch I made Saturday with water turned out great! this is very hearty and I don't tend to get hungry soon after eating it.

opps sorry, the 3 pts is a weight watcher term for 3 points, I orginally found the receipe on the Weight Watchers board

I made this today but I changed it a little. I used 1 cup of very ripe mashed bananas in place of the applesauce.
I also added slivered almonds & baked it a little longer.
My grandson and I loved it!
I'm going to make it again with pumpkin in place of the bananas.

Glad you both loved it!!! Pumkin sounds wonderful, think I will try that too...I like to make it on the weekends, sit and have coffee, baked oatmeal and read the paper...
