This is based on an Italian recipe that is with tuna and navy beans. It would therefore work well with tuna & cannellini beans but that would be only neutral.This variation I invented is different in character but very nice.
1 can pinto beans (or 4 oz dried pinto beans soaked & cooked)
1 small (1 person) can of salmon
1 onion
Juice of a lemon
Olive oil.
Halve the onion and slice very thinly (so that you get very thin onion half-rings).
Place the slices in a bowl of water & soak for at least an hour. This renders raw onion much more edible. Does not work for chopped onion, only sliced, as it needs plenty of cut surface.
Put the drained onion and the drained beans in a bowl, add lemon juice & oil to coat, mix well in. Add the salmon, mix well, eat.
