This delicious salad is especially beneficial to As and overall would be neutral for ABs and O Nons (with some beneficial ingredients).

I use it for a main protein source along with a green salad on the side. It is based on a Nigel Slater recipe & is therefore very quick to make.

For one:

ingredients
2-3 oz green or brown lentils (I like the puy kind)
one or two handsful of redcurrents (even better with whitecurrents if you can get them)
chives or salad onion to taste (I'd use a small salad onion or a small handful of chives) chopped
Dressing made with half olive oil, half lemon juice, crushed garlic, maybe a touch of mustard powder, salt.

Method
Cook the lentils. They cook fine without soaking but I understand it is healthier to soak for 5 hrs in acidulated water first. If you did this they will cook in 10-15 minutes, if not, say 20-25.

Cool the lentils to lukewarm or room temp.

Add the currants.

Add the dressing.

Eat it all up!!

In an emergency I have used tinned lentils for this & it worked fine.
