1/2 pint soya milk 1/2 lb ghee (clarified butter) 1 tsp powdered gelatine. I know this is an avoid but I don't know if it would thicken up properly without it and you may be able to think of an alternative
Warm soya milk & ghee in saucepan until tepid (not hot) Sprinkle on gelatine & dissolve. Do not overheat.
Pour in blender/food processor & blend on high speed for 30 seconds.
Transfer to a covered container & refrigerate. Needs to mature for several hours. Tastes pretty much like real thing but I have not tried whipping it. It went thick enough not to need it.
Served on a hot dessert it separated out but still tasted good. On a cold dessert it was virtually indistinguishable from cream.
The above recipe made a huge amount, I'd do less next time.

I would think it would work fine. The origin of this recipe is with real cows milk & butter. It originated in the 1970s when cream was very expensive in the UK but butter was subsidised.
You could try it and see?

I am going to experiment with rice milk, canola oil & arrowroot just to let you guys know if it worked. Only a small portion. At Xmas I shall be doing the recipe above but in a smaller amount, plus using arrowroot if it works.
