12 eggs, beaten
1/2 pound ground beef or turkey or sausage
1/2 cup chopped onions
1/4 to 1/2 cup chopped green pepper
1/2 cup shredded mozzarella cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder

Cook meat and set aside to cool.
Mix eggs, salt, pepper, and garlic powder in a large bowl; add onions, cheese, green pepper and cooked meat.
Grease muffin tins, and fill each muffin cup with about 1/3 cup of mixture.
Bake at 350 degrees for 20 to 25 minutes or until a knife inserted in the middle comes out clean.

Note: I made 1/2 the recipe, and this made 8 muffins.

btw, does hash-mark (which does not appear on my keyboard) mean pound? We don't use it to symbolise any measurement over here so I am just guessing).

I made these today and they're really WONDERFUL - sort of like a mini quiche. (half recipe)
I cooked the meat (turkey sausage) about half done then added the onion and bell pepper to finish cooking. I think that adds a little extra to the flavor.
I greased the cups with ghee and got 9 muffins.
I will DEFINITELY make these again. YUMMMMMMM
