3/4 cup white spelt flour
3/4 cup whole-wheat spelt flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp table salt
1 large egg, beaten
1/4 cup olive oil
3.5 - 4 tbsp veg. glycerin
15oz canned pears, diced (keep fruit juice aside)
1/2 cup diet cola (but I omitted this and used the fruit juice from the pears)

Preheat oven to 180 degrees celcius
Coat pan slightly with olive oil
Combine all flour, baking soda, baking powder, nutmeg, cinnamon and salt in a medium bowl
Combine egg, oil and veg. glycerin in a large bowl, add finely diced pears, stir in juice (or soda)
Stir flour mixture into egg mixture just enough to wet batter. Do not beat.
Spread batter into prepared pan and bake until toothpick inserted near the centre comes out clean. Approximately 30-40mins.

Hi Petal,

Your sweet pear bread sounds delicious, I think I will try it!

Thanks for the recipe, we need more like these with veg. glycerin!

hehe yeah it's nice.. it was my 1st attempt but I added too much pear juice from the can (I used the whole can) as I forgot that the pear pieces themselves will keep the cake quite moist.. so my cake wasnt too successful but it was good to eat.. it didnt leave me feeling bloated like when I ate the lemon syrup cake with full of bad-ness
