You may remember MD's meat & egg muffins recipe - click here to view. Here is a version I found very simple to make, was quick to do (once mixed, this takes maybe 3 minutes instead of 20) and my 6 year old son ate it happily. You can take advantage of this if you own an egg pocher: we use them a lot in the UK but I don't know if they are used elsewhere. Here is a picture of one:
you can guess the eggs (minus their shells) go in the little cups & the water goes underneath.
The recipe:
Serves one. Note, there is a higher meat to egg ratio than in the original. You could follow the original proportions if wanted. I left the cheese out because I didn't have any, no other reason.
Equipment:
- egg poacher
- frying pan or saucepan
- fork or spoon, wooden spoon or whatever.
Ingredients:
- egg
- 2oz ground beef
- half an onion
- some garlic
- any veg you want to add
.saute/sweat the onion, finely chopped; add ground beef & brown it thoroughly, add garlic or any other flavouring, stir in veg, pre-cooking if that seems sensible.
Heat the water in your poacher and oil the cups as usual, as if about to poach an egg.
Stir beaten egg into the meat mixture, spoon into the poaching cups (this amount filled 2 cups), cook for a few minutes until set.
Turn out onto a plate & eat with any accompaniment desired.
